Soil Type Red clay
Vinification The grapes were harvested at 24° Balling, cold soaked for 1 day and then inoculated with a selected yeast. The wine was pushed through and pumped over on a regular basis and then pressed and moved to a stainless steel tank. MLF took place in the tank and the wine was racked after 2 months. It was filtered before bottling.
Maturation 6 months on American staves. Very lightly wooded.
